Moscow sausage is a smoked sausage that differs from other varieties by its dark brown color, relatively dense consistency, with a light salty taste and a sharp smoked smell. The loaf of Moscow sausage is wrinkled, where you can clearly see large pieces of beef fat. Since the composition of this sausage includes a large amount of fats and proteins, as opposed to low moisture content, the product retains its taste qualities for a long time. Moscow sausage has two main types: boiled and smoked and raw smoked. Boiled and smoked sausage is first smoked and cooked, and then the product goes through an additional smoking process, after which it is dried. And when preparing raw smoked Moscow, the cooking procedure is not necessary: smoking and prolonged drying are enough, but all this requires about a month to obtain a quality product. Ingredients: beef, chicken meat, beef fat, table salt, granulated sugar, natural flavoring and aromatic additives-ground black pepper and ground nutmeg. Due to the fact that during thermal treatments, the meat gradually loses its original color and becomes slightly grayish, sodium nitrate is often included in the composition of sausage products, which serves as a color fixative. Moscow sausage is a high-calorie food product. Nutritional and energy value per 100 g of the product: 14g of protein, 28g of fat, calorie content is 310 kcal.
